Kofta and Potato Soup
Ingredients
- 250 grams kofta meat
- 2 tablespoons corn oil
- 1 onion, chopped
- 1 clove garlic, crushed
- 2 chili peppers, chopped
- 2 tablespoons tomato paste
- 1/4 cup vinegar
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon mixed spices
- 1 large potato, cut into small cubes
- 1/2 cup chopped cilantro or parsley
- 2 cups water
Preparation
Form the kofta into very small balls.
In a pot, heat the oil and add the kofta balls, stir for a few minutes until golden and firm.
Add the onion, garlic, and chili pepper, stir with the kofta, add salt, paprika, and mixed spices as desired, continue sautéing and stirring the kofta balls to develop flavor.
Add the potatoes and tomato paste, then add about 2 cups of water, stir, and add half the amount of parsley.
Cover the pot and let the soup cook for about 10 minutes, sprinkle the remaining parsley and serve.
