Steamed Tofu with Salted Eggs

Ingredients

  • 6 boxes yellow tofu
  • 6 salted eggs
  • 4 tablespoons fibercreme powder
  • Basil leaves as needed
  • Banana leaves for wrapping
  • Toothpicks
  • Bird's eye chilies as needed (optional)

Seasoning

  • 6 shallots
  • 4 garlic cloves
  • 6 curly chilies
  • 1 thumb-sized ginger
  • 2 cm turmeric
  • 1/2 teaspoon white pepper powder
  • 1 teaspoon salt
  • Mushroom or chicken stock as needed

Preparation

  1. Grind all the spices, mix with the tofu, salted egg whites, and fibercreme, then stir well and add the basil leaves before stirring again until evenly mixed.

  2. Prepare the banana leaves, take 2 tablespoons of the tofu mixture, place a salted egg yolk in the center, then add another 2 tablespoons of tofu mixture beside it and include bird's eye chilies if desired before wrapping with banana leaves and securing with toothpicks.

  3. Steam until cooked, about 15 to 20 minutes, and ensure the steamer lid is covered with a cloth to prevent water from dripping onto the parcels.
