Bitter Melon Omelette with Shrimp
Ingredients
- 2 chicken eggs (beaten)
- 5 shrimp
- 1 leek
- 1/2 bitter melon
- 2 shallots
- 2 garlic cloves
- 10 bird's eye chilies
- Salt to taste
- Pepper to taste
- Cooking oil as needed
Preparation
Mix the chopped bitter melon with salt, massage until it releases water, wash clean, and drain.
Heat the wok, add bitter melon and shrimp, stir-fry until wilted, remove and set aside.
Mix the beaten eggs with the crushed shallots and garlic, along with pepper, salt, chopped bird's eye chilies, chopped leek, bitter melon, and shrimp, stir until well mixed.
Heat cooking oil, pour the egg mixture, cook like an omelette, and serve.
