Almond and Banana Muffins

Ingredients

  • 1 very ripe banana
  • 85 grams almond butter (approx. 1/3 cup)
  • 1 egg
  • 70 grams oats (approx 1/4 cup, plus 1 tablespoon)
  • 1/2 teaspoon baking powder

Preparation

  1. In a bowl, mash the banana with a fork.

  2. Add the rest of the ingredients and mix until well combined.

  3. Add to a muffin tin; if available, use paper muffin cases for a more seamless baking process.

  4. Bake for 20-25 minutes at 350°F or 180°C.
