Best Ever Healthy Carrot Cake

Ingredients

  • 200g oat flour
  • 200g carrot (grated)
  • 30g coconut oil
  • 4 flax eggs
  • 1 tbsp vanilla
  • 2 tbsp baking powder
  • walnuts

Preparation

  1. Whisk together the flour and baking powder.

  2. Combine the wet ingredients with the dry and add the walnuts and carrots.

  3. Bake for 30-40 minutes.

  4. Make the frosting with coconut yogurt and vanilla.

Notes

  1. Carrots are an excellent source of pro-vitamin A, vitamins C, D, E, K, B1 and B6, and are rich in biotin, potassium, calcium, magnesium, phosphorus, organic sodium, and trace minerals, essential for overall health. Peel non-organic carrots to remove pesticides that may cause bloating.
