Best Ever Healthy Carrot Cake
Ingredients
- 200g oat flour
- 200g carrot (grated)
- 30g coconut oil
- 4 flax eggs
- 1 tbsp vanilla
- 2 tbsp baking powder
- walnuts
Preparation
Whisk together the flour and baking powder.
Combine the wet ingredients with the dry and add the walnuts and carrots.
Bake for 30-40 minutes.
Make the frosting with coconut yogurt and vanilla.
Notes
Carrots are an excellent source of pro-vitamin A, vitamins C, D, E, K, B1 and B6, and are rich in biotin, potassium, calcium, magnesium, phosphorus, organic sodium, and trace minerals, essential for overall health. Peel non-organic carrots to remove pesticides that may cause bloating.
