Blueberry and Lemon Muffins
Ingredients
- 125g self raising flour
- 3 tbsp sugar or sugar alt (I used @truvia)
- 120ml milk
- 2 eggs
- 4 tbsp sunflower or olive oil
- 100g blueberries, fresh or frozen
- Zest of 1 lemon
Preparation
Preheat oven to 200°C or 180°C fan.
Mix all ingredients in a large bowl until a smooth batter is formed.
Divide mixture between 6 muffin cases.
Bake for 20-25 minutes until golden brown. Allow to cool before serving.
