Blueberry and Lemon Muffins

Ingredients

  • 125g self raising flour
  • 3 tbsp sugar or sugar alt (I used @truvia)
  • 120ml milk
  • 2 eggs
  • 4 tbsp sunflower or olive oil
  • 100g blueberries, fresh or frozen
  • Zest of 1 lemon

Preparation

  1. Preheat oven to 200°C or 180°C fan.

  2. Mix all ingredients in a large bowl until a smooth batter is formed.

  3. Divide mixture between 6 muffin cases.

  4. Bake for 20-25 minutes until golden brown. Allow to cool before serving.
