Cardamom Spiced Cupcakes with Almonds and Poppy Seeds
Ingredients
- Spelt Flour whole grain 2 cups
- Baking powder 2 tsp
- Baking soda 1/2 tsp
- Flaxseed powder 2 tsp
- Cardamom powder 2 tsp
- Immunity Blend 2 tsp powder from @unicornsuperfoods which has carrot powder, ginger powder, orange powder
- Virgin Olive oil 1/2 cup
- Soy milk 1 1/2 cup
- Pinch of salt
- Poppy seeds 2 tsp
- Coconut sugar or Raw Sugar 1 cup
- Almonds chopped 1/4 cup
Preparation
Preheat the oven to 350°, line a standard cup muffin tin with liners and set aside.
In a mixing bowl, sift together all the dry ingredients.
In another bowl, whisk together soy milk, oil and sugar together. Whisk just long enough to slightly dissolve the sugar.
Add wet ingredients to the dry, mixing well. Make sure not to over mix it.
Use a scooper and fill the prepared cupcake tins.
Bake for 20 to 25 minutes until they are done.
Remove and allow them to cool on a wire cooling rack.
