Rose Flavored Vegan Cupcakes Inspired by Childhood
Ingredients
- 2 cups spelt flour whole grain
- 2 teaspoons poppy seeds
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 tablespoons Ruafzza or rose essence
- 1/4 cup chopped pistachios
- 1.5 cups coconut sugar or raw sugar
- 1 cup soy milk
- 1/2 cup extra virgin olive oil
- 2 teaspoons flaxseed powder
Preparation
Mix all the dry ingredients in a bowl and mix well.
In another bowl, add wet ingredients and mix well until smooth. You can use a beater or whisk; it works fine too.
Add the wet mixture into the dry one and fold together without over mixing.
Preheat oven to 350°.
Place cupcakes in oven and bake for 20 minutes or until cooked.
