Rose Flavored Vegan Cupcakes Inspired by Childhood

Ingredients

  • 2 cups spelt flour whole grain
  • 2 teaspoons poppy seeds
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 tablespoons Ruafzza or rose essence
  • 1/4 cup chopped pistachios
  • 1.5 cups coconut sugar or raw sugar
  • 1 cup soy milk
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons flaxseed powder

Preparation

  1. Mix all the dry ingredients in a bowl and mix well.

  2. In another bowl, add wet ingredients and mix well until smooth. You can use a beater or whisk; it works fine too.

  3. Add the wet mixture into the dry one and fold together without over mixing.

  4. Preheat oven to 350°.

  5. Place cupcakes in oven and bake for 20 minutes or until cooked.
