Crispy Savory Falafels with Gluten-Free Coating

Ingredients

  • 2 cans garbanzo beans, drained
  • 1 small onion, chopped
  • 3 cloves garlic
  • Juice of 1 lemon
  • 2 tablespoons tahini
  • 2 teaspoons cumin
  • Small handful of whole coriander
  • Handful of parsley or cilantro
  • 1.5 cups garbanzo flour
  • 0.5 cup water
  • Salt and pepper to taste
  • Panko bread crumbs for coating (gluten-free rice crumbs used)

Preparation

  1. In a food processor, blend all ingredients except for the rice crumbs.

  2. Scoop the thick batter with an ice cream scooper and coat it with the crumbs until you can hold it in your hands and form balls.

  3. Cook the falafels in an air fryer at 390°F for 10 minutes with a little avocado oil spray, or bake them on parchment paper with avocado oil until golden brown.

  4. Serve with salad, hummus, tabouli, or other sides such as arugula, red cabbage, fennel, cherry tomatoes, cilantro, pumpkin seeds, pomegranate seeds, and sliced avocado.
