Festive Baked Apple Cake with Marzipan

Ingredients

  • 120 g butter
  • 120 g xylitol
  • 1 teaspoon vanilla sugar
  • a pinch of salt
  • 3 eggs
  • 200 g spelt flour
  • 2 teaspoons baking powder
  • 3 tablespoons almond milk
  • 1 teaspoon gingerbread spice
  • 100 g marzipan
  • 50 g raisins
  • 2 tablespoons sugar-free jam (plum, blueberry, or raspberry)
  • 2 tablespoons chopped almonds
  • 6 small apples

Preparation

  1. Preheat oven to 180°C. Grease the baking pan with some butter.

  2. Cream butter with xylitol, salt, and vanilla sugar until fluffy.

  3. Add eggs one by one.

  4. Mix spelt flour and baking powder and sift into the butter mixture.

  5. Add milk and knead the ingredients into a smooth dough.

  6. Add the gingerbread spice to the dough and stir.

  7. Finely chop 50 g marzipan and mix into the batter.

  8. Mix another 50 g marzipan with raisins, 2 tablespoons blueberry jam, and almonds. Peel and core the apples. Fill with the marzipan mixture.

  9. Fill the greased springform pan with the cake batter. Press the filled apples into the batter.

  10. Bake the cake in the hot oven for about 60 minutes.

  11. After 40 minutes, cover with aluminum foil.

  12. Remove the baked apple cake from the oven and let it cool slightly.

  13. Dust with powdered sugar.
