Healthy Baked Falafel Burgers
Ingredients
- 1 can of chickpeas, drained
- 1/4 cup parsley, loosely chopped
- 1/4 cup cilantro, loosely chopped
- 2 tbsp mint, loosely chopped
- 1 small onion, chopped
- 4 cloves garlic, peeled
- 1/4 cup walnuts (optional)
- 1/2 lemon, juiced
- 3 tbsp chickpea flour (or flour of choice)
- 1 tbsp olive or avocado oil
- 1 tbsp ground cumin
- 1 tsp ground coriander
- 1 tsp crushed chili flakes
- 1 tsp baking powder
- A big pinch of salt & pepper
- 1/2 cup panko crumbs (optional)
Preparation
Place all ingredients into a food processor and blend until you get a wet dough.
Shape into burger patties and lightly press each patty into panko crumbs.
Place patties on a parchment lined baking sheet and bake in a preheated oven at 375 degrees F for 25-35 minutes depending on the size of your patties, flipping at the halfway point.
Tips
Prepare a large batch and freeze the shaped patties on a parchment-lined baking sheet before storing in an airtight container for easy meals.
These are suitable for baby-led weaning and are popular with kids.
Top with a simple garlic lemon tahini sauce for added flavor.
