Healthy Baked Falafel Burgers

Ingredients

  • 1 can of chickpeas, drained
  • 1/4 cup parsley, loosely chopped
  • 1/4 cup cilantro, loosely chopped
  • 2 tbsp mint, loosely chopped
  • 1 small onion, chopped
  • 4 cloves garlic, peeled
  • 1/4 cup walnuts (optional)
  • 1/2 lemon, juiced
  • 3 tbsp chickpea flour (or flour of choice)
  • 1 tbsp olive or avocado oil
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp crushed chili flakes
  • 1 tsp baking powder
  • A big pinch of salt & pepper
  • 1/2 cup panko crumbs (optional)

Preparation

  1. Place all ingredients into a food processor and blend until you get a wet dough.

  2. Shape into burger patties and lightly press each patty into panko crumbs.

  3. Place patties on a parchment lined baking sheet and bake in a preheated oven at 375 degrees F for 25-35 minutes depending on the size of your patties, flipping at the halfway point.

Tips

  1. Prepare a large batch and freeze the shaped patties on a parchment-lined baking sheet before storing in an airtight container for easy meals.

  2. These are suitable for baby-led weaning and are popular with kids.

  3. Top with a simple garlic lemon tahini sauce for added flavor.
