Mediterranean Inspired Falafel Burger
Ingredients
Falafel patty
- 2 Cans or 3 cups Cooked Chickpeas
- 3 Garlic cloves
- 1/2 Red Onion
- 1/2 Fresh Coriander or Cilantro, only leaves
- 2 Tbsp. Ground Coriander
- 2 Tbsp. Ground Cumin
- 2 Tbsp. Chickpea Flour or Graham Flour
- 1 Tsp. Baking Powder
- 1 Tsp. Chilli powder (optional)
- A pinch of salt
- A pinch of black pepper
Tabouleh
- 3 Fresh Parsley
- 1 Fresh Mint
- 1 Green onion
- 2 Tomatoes
- 1 Lemon
- 1/4 cup Fine Burger
- 2 Tbsp Olive oil
- 1 Tsp sumac (optional)
Preparation
Mash the cooked chickpeas until smooth
Finely chop the garlic, red onion, and coriander leaves
In a bowl, combine the mashed chickpeas with garlic, onion, coriander leaves, ground coriander, ground cumin, chickpea flour, baking powder, chili powder if using, salt, and black pepper; mix well to form a dough
Shape the mixture into patties
Cook the patties in a skillet with oil over medium heat or bake in a preheated oven at 375°F until golden and crispy, about 15-20 minutes
For the tabouleh, finely chop the parsley, mint, green onion, and tomatoes
In a separate bowl, combine the chopped herbs and vegetables with fine bulgur, juice from the lemon, olive oil, and sumac if using; mix thoroughly and let sit for 10 minutes to allow flavors to blend
Assemble the burger by placing a falafel patty in a bun and topping with the tabouleh mixture
