Healthy Vegan Peanut Butter Cookies with Chocolate
Ingredients
- 1/2 cup peanut butter
- 1-2 tbsp maple syrup or agave
- 2/3 cup quick oats
- 2/3 cup buckwheat flour or oat flour
- 1/3 cup shredded coconut
- a pinch of salt
- 1/3 cup chopped vegan chocolate
Preparation
Preheat oven to 175 degrees Celsius and line a baking tray with parchment paper.
Melt peanut butter and mix in 1-2 tbsp maple syrup or agave.
Add 2/3 cup quick oats, 2/3 cup buckwheat flour or oat flour, 1/3 cup shredded coconut, and a pinch of salt.
Mix well and stir in 1/3 cup chopped vegan chocolate.
Roll into small or large cookies, place on the baking tray, press flat with a fork or the back of a spoon, and add more chocolate chunks and coarse salt flakes on top.
Bake for 8-10 minutes until golden, then remove and store in a dry container for up to one week.
Tips
Substitute peanut butter with almond or cashew butter.
Add nuts or dried cranberries instead of chocolate.
Substitute coconut with almond flour.
