Healthy Vegan Peanut Butter Cookies with Chocolate

Ingredients

  • 1/2 cup peanut butter
  • 1-2 tbsp maple syrup or agave
  • 2/3 cup quick oats
  • 2/3 cup buckwheat flour or oat flour
  • 1/3 cup shredded coconut
  • a pinch of salt
  • 1/3 cup chopped vegan chocolate

Preparation

  1. Preheat oven to 175 degrees Celsius and line a baking tray with parchment paper.

  2. Melt peanut butter and mix in 1-2 tbsp maple syrup or agave.

  3. Add 2/3 cup quick oats, 2/3 cup buckwheat flour or oat flour, 1/3 cup shredded coconut, and a pinch of salt.

  4. Mix well and stir in 1/3 cup chopped vegan chocolate.

  5. Roll into small or large cookies, place on the baking tray, press flat with a fork or the back of a spoon, and add more chocolate chunks and coarse salt flakes on top.

  6. Bake for 8-10 minutes until golden, then remove and store in a dry container for up to one week.

Tips

  1. Substitute peanut butter with almond or cashew butter.

  2. Add nuts or dried cranberries instead of chocolate.

  3. Substitute coconut with almond flour.
