Healthy Vegan Protein Cookies
Ingredients
- 2 scoops pomegranate protein powder
- 3/4 cup oat flour
- 1/3 cup oat flakes
- 2 tablespoons plant-based beverage
- 1 cup peanut butter
- 3/4 cup maple syrup
- 1 tablespoon vanilla and cinnamon
- 50g dark chocolate chips and goji berries
Preparation
Preheat oven to 350°F (175°C).
In a bowl, mix together the dry ingredients: pomegranate protein powder, oat flour, oat flakes, and cinnamon.
In another bowl, combine the wet ingredients: peanut butter, maple syrup, plant-based beverage, and vanilla.
Gradually add the wet mixture to the dry ingredients and stir until well combined.
Fold in the dark chocolate chips and goji berries.
Shape the mixture into cookie balls and place them on a baking sheet.
Bake for 10-15 minutes or until golden brown.
Allow to cool before serving.
