Peanut Butter and Jelly Cookies

Ingredients

  • 125g peanut butter
  • 100g maple syrup
  • tsp vanilla extract
  • 60g gluten free plain flour
  • tsp baking powder
  • pinch of salt
  • strawberry jam

Preparation

  1. Mix peanut butter, maple syrup and vanilla together.

  2. Mix in dry ingredients: flour, baking powder and salt.

  3. Mix well until a large ball is formed.

  4. Refrigerate for 20 minutes.

  5. After 20 minutes, take a piece of dough, roll into a ball and flatten onto lined baking tray.

  6. Place a teaspoon of strawberry jam into the center and cover with a smaller piece of flattened dough.

  7. Repeat for the remaining dough.

  8. Refrigerate for 30 minutes before baking at 180°C for 12-15 minutes.

Notes

  1. The fat in peanut butter is mostly good monounsaturated fat, and peanuts provide nutrients like vitamin E, niacin, folate, protein and manganese.

  2. Peanut butter adds creaminess and calories to snacks and can promote heart health.
