Healthy Vegan Rudolph Holiday Cookies
Ingredients
- 1 1/4 cup gluten free baking flour (@bobsredmill)
- 1/4 cup cacao powder (@navitasorganics)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1/4 cup coconut oil (@vitacoco)
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk (@malkorganics)
- 1 1/2 tbsp corn starch
- 1 tsp vanilla
- white cookie icing
- @quinnsnacks for the ears
- googley eyes
- @unreal.snacks dark chocolate quinoa gems
Preparation
Mix wet and dry ingredients in a big bowl.
Refrigerate the batter for 30-45 minutes.
On a baking sheet, form balls that are 1 inch in diameter and flatten them slightly with your fingers.
Place them in the oven for 11 minutes at 350°F.
Decoration
Use white cookie icing as glue to attach @quinnsnacks for the ears, googley eyes, and @unreal.snacks dark chocolate quinoa gems as the nose.
