Healthy Vegan Rudolph Holiday Cookies

Ingredients

  • 1 1/4 cup gluten free baking flour (@bobsredmill)
  • 1/4 cup cacao powder (@navitasorganics)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (@vitacoco)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk (@malkorganics)
  • 1 1/2 tbsp corn starch
  • 1 tsp vanilla
  • white cookie icing
  • @quinnsnacks for the ears
  • googley eyes
  • @unreal.snacks dark chocolate quinoa gems

Preparation

  1. Mix wet and dry ingredients in a big bowl.

  2. Refrigerate the batter for 30-45 minutes.

  3. On a baking sheet, form balls that are 1 inch in diameter and flatten them slightly with your fingers.

  4. Place them in the oven for 11 minutes at 350°F.

Decoration

  1. Use white cookie icing as glue to attach @quinnsnacks for the ears, googley eyes, and @unreal.snacks dark chocolate quinoa gems as the nose.
