Vegan/gf Vanilla Cake Donuts

Ingredients

  • 1 cup almond milk
  • 1/3 cup coconut oil
  • 2/3 cup coconut sugar
  • 1 tbsp vanilla extract
  • 1 tbsp apple cider vinegar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • glaze
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 tbsp arrowroot or tapioca starch
  • 1 tsp vanilla (or 2 tbsp cocoa powder for chocolate)

Preparation

  1. Whisk together the milk, coconut oil, coconut sugar, vanilla, and vinegar

  2. Add the flour, baking powder, baking soda, and salt

  3. Whisk to combine

  4. Use a plastic bag to pipe the batter into a (greased) donut pan

  5. Bake for 20-25 minutes at 350ºF

  6. Cool before glazing

  7. Whisk together glaze ingredients (make sure maple syrup is room temp or it will clump up)

  8. Dip in glaze and toppings

  9. Refrigerate until glaze is set

  10. Enjoy
