Mexican Inspired Breakfast Hash

Ingredients

  • 1 can black beans
  • 1 tomato
  • 1 cup kale
  • cilantro
  • salsa for topping. (this makes a ton ? 3-4 big servings in this recipe!)

Preparation

  1. Dice and coat potatoes in 1/2 tsp of red pepper flakes, cumin, pepper, garlic powder, a dash of salt & olive oil and roast it in the oven in a Pyrex at 425F for 20 minutes, stirring once halfway through

  2. Chop onions and garlic and add them to the Pyrex and let them sit in the oven for another 15-20 minutes, stirring halfway

  3. Sauté tomatoes, kale and black beans with a dash of salt pepper and cumin in a large frying pan

  4. Remove Pyrex from oven and add the potatoes, onions & garlic to the frying pan

  5. Mix together until heated through completely. top with salsa, cilantro and serve with a side of ketchup for ultimate deliciousness
