Mexican Inspired Breakfast Hash
Ingredients
- 1 can black beans
- 1 tomato
- 1 cup kale
- cilantro
- salsa for topping. (this makes a ton ? 3-4 big servings in this recipe!)
Preparation
Dice and coat potatoes in 1/2 tsp of red pepper flakes, cumin, pepper, garlic powder, a dash of salt & olive oil and roast it in the oven in a Pyrex at 425F for 20 minutes, stirring once halfway through
Chop onions and garlic and add them to the Pyrex and let them sit in the oven for another 15-20 minutes, stirring halfway
Sauté tomatoes, kale and black beans with a dash of salt pepper and cumin in a large frying pan
Remove Pyrex from oven and add the potatoes, onions & garlic to the frying pan
Mix together until heated through completely. top with salsa, cilantro and serve with a side of ketchup for ultimate deliciousness
