Spanish Right Rice Black Bean Bowl

Ingredients

  • 3/4 cup Spanish Right Rice
  • 1 tablespoon red onion
  • 1/2 jalapeño
  • 1/3 cup sweet corn
  • black beans
  • cilantro
  • avocado
  • sliced tomatoes
  • kale

Sriracha lime crema

  • 2 tablespoons GT's Kombucha CocoYo Pure or greek yogurt of choice
  • 1 teaspoon lime juice
  • 1 teaspoon Sriracha or hot sauce of choice

Preparation

  1. Bring 1 1/4 cups water to a boil in a saucepan. Remove from heat and add Right Rice, onion, and jalapeno. Cover with lid and let sit for 6 minutes. Add in corn and heat for 6-8 more minutes until water is fully absorbed.

  2. Meanwhile, prepare kale, tomatoes, avocado, heat black beans, and mix crema.

  3. Add all ingredients to a bowl and top with crema and a squeeze of lime.
