Spanish Right Rice Black Bean Bowl
Ingredients
- 3/4 cup Spanish Right Rice
- 1 tablespoon red onion
- 1/2 jalapeño
- 1/3 cup sweet corn
- black beans
- cilantro
- avocado
- sliced tomatoes
- kale
Sriracha lime crema
- 2 tablespoons GT's Kombucha CocoYo Pure or greek yogurt of choice
- 1 teaspoon lime juice
- 1 teaspoon Sriracha or hot sauce of choice
Preparation
Bring 1 1/4 cups water to a boil in a saucepan. Remove from heat and add Right Rice, onion, and jalapeno. Cover with lid and let sit for 6 minutes. Add in corn and heat for 6-8 more minutes until water is fully absorbed.
Meanwhile, prepare kale, tomatoes, avocado, heat black beans, and mix crema.
Add all ingredients to a bowl and top with crema and a squeeze of lime.
