One Bowl Gingerbread Muffins

Ingredients

  • In a large bowl make 2 flax eggs by mixing 2 Tbsp flax seeds mixed with 6 Tbsp water
  • 1/2 cup liquid coconut oil
  • 1/3 cup coconut sugar
  • 1/3 cup unsulfured molasses
  • 1/2 cup unsweetened applesauce
  • 1/2 cup non dairy m*lk
  • Stir well
  • Then add
  • 2 cups flour (I used spelt)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg

Preparation

  1. Stir until just blended

  2. Pour into muffin tin and bake 15-18 minutes

  3. Allow to sit for at least 10 minutes before turning out

  4. Sprinkle with confectioners sugar if desired
