One Bowl Gingerbread Muffins
Ingredients
- In a large bowl make 2 flax eggs by mixing 2 Tbsp flax seeds mixed with 6 Tbsp water
- 1/2 cup liquid coconut oil
- 1/3 cup coconut sugar
- 1/3 cup unsulfured molasses
- 1/2 cup unsweetened applesauce
- 1/2 cup non dairy m*lk
- Stir well
- Then add
- 2 cups flour (I used spelt)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
Preparation
Stir until just blended
Pour into muffin tin and bake 15-18 minutes
Allow to sit for at least 10 minutes before turning out
Sprinkle with confectioners sugar if desired
