Peaches and Cream Custard Slice π
Ingredients
For the Base
- 1 1/2 cup All Purpose Flour
- 1/2 cup Vegan Butter
- 1/4 cup Sweetener
- Tinned Peaches
For the Custard
- 2 cups Coconut Milk (@naturescharm_au)
- 4 tbs Tapioca Flour
- 1/4 cup Sweetener
- 2 tsp Vanilla
- Cinnamon for topping
Preparation
Preheat oven to 180Β°.
Mix base ingredients together until consistency resembles wet sand and holds together when pushed.
Pour into a lined baking tin and push down firmly.
Bake for 20 minutes. Set aside to cool completely before adding peaches and custard.
Make the custard by whisking ingredients together in a saucepan until combined.
Bring to a boil, stirring constantly. Once it reaches a boil, bring heat to low and keep stirring until the mixture becomes thick.
Lay peach slices on top of the base and pour custard over the top. Sprinkle with cinnamon and put in the fridge for a few hours to set.
