Pear Baked Oats with Coconut Cream

Ingredients

  • 100g oats
  • 100g pear, chopped, peeled and cooked
  • 100g any yogurt (I use soy)
  • 1 tablespoon dried fruit
  • 1 tablespoon sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 3 tablespoons boiling water

Preparation

  1. Soak oats in boiling water in a bowl for five minutes.

  2. Mix in all of the other ingredients including the cooked pear.

  3. Pour mixture into a shallow oven-proof dish lined with baking parchment or paper and bake in the oven for 30 minutes at 180°C/350°F/gas mark 4.

  4. Serve hot or cold with maple syrup, yogurt, cream, custard, or yogurt.
