Quick Microwave Pumpkin Monkey Bread
Ingredients
- 1/2 cup oat flour
- 2 Tbsp pumpkin purée
- 2 Tbsp + 1 tsp almond milk
- 30 g vegan vanilla protein powder
- 1/2 tsp baking powder
- 1 scoop turmeric latte powder
- Pinch of salt
- 1 tsp Ceylon cinnamon
- 2 Tbsp maple syrup
Preparation
Mix all ingredients together to make a dough and then roll into balls.
Mix 1 teaspoon of Ceylon cinnamon and 2 tablespoons maple syrup together, then coat each of the dough balls in the mixture. Place in a microwaveable bowl, drizzle any leftover cinnamon mixture on top, and microwave for 1 minute.
