Quick Microwave Pumpkin Monkey Bread

Ingredients

  • 1/2 cup oat flour
  • 2 Tbsp pumpkin purée
  • 2 Tbsp + 1 tsp almond milk
  • 30 g vegan vanilla protein powder
  • 1/2 tsp baking powder
  • 1 scoop turmeric latte powder
  • Pinch of salt
  • 1 tsp Ceylon cinnamon
  • 2 Tbsp maple syrup

Preparation

  1. Mix all ingredients together to make a dough and then roll into balls.

  2. Mix 1 teaspoon of Ceylon cinnamon and 2 tablespoons maple syrup together, then coat each of the dough balls in the mixture. Place in a microwaveable bowl, drizzle any leftover cinnamon mixture on top, and microwave for 1 minute.
