Pumpkin Oats with Caramelized Bananas
Ingredients
- 1/3 cup rolled oats
- 2 tablespoons pumpkin purée
- 1/2 teaspoon pumpkin pie spice
- 1-2 teaspoons brown sugar
- Pinch of salt
- 1 cup almond milk
Banana topping
- Bananas
- Maple syrup
- Pinch of salt
- 1 teaspoon vegan butter (optional)
Preparation
Add all the ingredients to a saucepan and bring to a low simmer.
Allow to cook and thicken as desired for 3-5 minutes.
Remove from heat and stir well then serve topped with nut butter and other toppings.
Caramelized bananas
Slice bananas into coins and place on a non-stick pan with a little drizzle of maple syrup and a pinch of salt.
Allow bananas to cook and brown on both sides.
For extra caramel flavor, add a teaspoon of vegan butter and cook the bananas to brown the edges.
