Pumpkin Oats with Caramelized Bananas

Ingredients

  • 1/3 cup rolled oats
  • 2 tablespoons pumpkin purée
  • 1/2 teaspoon pumpkin pie spice
  • 1-2 teaspoons brown sugar
  • Pinch of salt
  • 1 cup almond milk

Banana topping

  • Bananas
  • Maple syrup
  • Pinch of salt
  • 1 teaspoon vegan butter (optional)

Preparation

  1. Add all the ingredients to a saucepan and bring to a low simmer.

  2. Allow to cook and thicken as desired for 3-5 minutes.

  3. Remove from heat and stir well then serve topped with nut butter and other toppings.

Caramelized bananas

  1. Slice bananas into coins and place on a non-stick pan with a little drizzle of maple syrup and a pinch of salt.

  2. Allow bananas to cook and brown on both sides.

  3. For extra caramel flavor, add a teaspoon of vegan butter and cook the bananas to brown the edges.
