Pumpkin Oats with Caramelized Bananas
Ingredients
- 1/3 cup rolled oats
- 2 tbsp pumpkin purée
- 1/2 tsp pumpkin pie spice
- 1-2 tsp brown sugar
- Pinch of salt
- 1 cup almond milk
Toppings
- Bananas
- Maple syrup
- Pinch of salt
- 1 tsp vegan butter (optional)
- Nut butter
Preparation
Add all ingredients to a saucepan and bring to a low simmer.
Allow to cook and thicken as desired, about 3-5 minutes.
Remove from heat and stir well, then serve topped with nut butter and other toppings.
Caramelized bananas
Slice bananas into coins and place on a non-stick pan with a little drizzle of maple syrup and a pinch of salt.
Allow bananas to cook and brown on both sides.
For extra caramel flavor, add 1 teaspoon of vegan butter and cook to really brown the edges.
