Pumpkin Oats with Caramelized Bananas

Ingredients

  • 1/3 cup rolled oats
  • 2 tbsp pumpkin purée
  • 1/2 tsp pumpkin pie spice
  • 1-2 tsp brown sugar
  • Pinch of salt
  • 1 cup almond milk

Toppings

  • Bananas
  • Maple syrup
  • Pinch of salt
  • 1 tsp vegan butter (optional)
  • Nut butter

Preparation

  1. Add all ingredients to a saucepan and bring to a low simmer.

  2. Allow to cook and thicken as desired, about 3-5 minutes.

  3. Remove from heat and stir well, then serve topped with nut butter and other toppings.

Caramelized bananas

  1. Slice bananas into coins and place on a non-stick pan with a little drizzle of maple syrup and a pinch of salt.

  2. Allow bananas to cook and brown on both sides.

  3. For extra caramel flavor, add 1 teaspoon of vegan butter and cook to really brown the edges.
