Russian Black and White Cake

Ingredients

Cake

  • 2 cups caster sugar
  • 1 3/4 cups flour
  • 1 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup water

Chocolate cream cheese filling

  • 125g cooking chocolate
  • 250g cream cheese
  • 50g caster sugar
  • 5 tablespoons milk

Cream cheese filling

  • 250g cream cheese
  • 1/4 cup caster sugar
  • 1 teaspoon vanilla extract

Chocolate ganache

  • 1 cup chocolate chips
  • 1 cup whipping cream

Preparation

  1. Beat eggs and sugar until fluffy.

  2. Add milk, water, oil, and vanilla extract and mix until well combined.

  3. Mix all dry ingredients together and stir until combined.

  4. Line the baking pan with parchment paper.

  5. Prepare 4 baking pans and pour the batter equally.

  6. Bake at 170°C for 20 minutes per pan.

  7. Let cool for 10 minutes before removing from pans.

Chocolate cream cheese filling

  1. Melt chocolate using double boiler method.

  2. Beat cream cheese, sugar, milk, and chocolate until smooth.

Cream cheese filling

  1. Mix all ingredients and beat until smooth.

Chocolate ganache

  1. Melt chocolate using double boiler method.

  2. Whip cream until soft.

  3. Pour chocolate and mix until combined.

Assembly

  1. Put chocolate cream cheese and cream cheese into piping bags.

  2. Take one cake layer and pipe chocolate cream cheese in circles.

  3. Then alternate with cream cheese.

  4. Take another cake layer and place on top, then pipe cream cheese in circles.

  5. Then pipe chocolate cream cheese.

  6. Repeat steps until all layers are used.

  7. Once layering is done, pipe cream cheese all over the cake and smooth it out.

  8. Finally, pour chocolate ganache over it.

  9. Chill in the refrigerator for a while.

Notes

  1. Adjust baking time and temperature according to your oven.
