Single Serve High Protein Pumpkin Cookie

Ingredients

  • 30g plain flour
  • 15g @myvegan @myproteinuk vanilla soy isolate protein powder
  • 5g chia seeds
  • 50g pumpkin purée
  • 1/4 tsp baking powder and the whole tub of cinnamon

Toppings

  • 5g pumpkin seeds
  • some @myproteinuk peanut butter

Preparation

  1. Mix all of the ingredients together except for the toppings, and add some of the pumpkin seeds; leave the remaining to top with.

  2. Mould into a cookie.

  3. Place onto a baking lined baking tray.

  4. Bake in the oven for 15 minutes at 180°C.

  5. Leave to cool and top with the peanut butter.

  6. Drizzle with sugar-free syrup.
