Single Serve High Protein Pumpkin Cookie
Ingredients
- 30g plain flour
- 15g @myvegan @myproteinuk vanilla soy isolate protein powder
- 5g chia seeds
- 50g pumpkin purée
- 1/4 tsp baking powder and the whole tub of cinnamon
Toppings
- 5g pumpkin seeds
- some @myproteinuk peanut butter
Preparation
Mix all of the ingredients together except for the toppings, and add some of the pumpkin seeds; leave the remaining to top with.
Mould into a cookie.
Place onto a baking lined baking tray.
Bake in the oven for 15 minutes at 180°C.
Leave to cool and top with the peanut butter.
Drizzle with sugar-free syrup.
