Single Serve High Protein Pumpkin Cookie

Ingredients

  • 0g plain flour
  • 15g @myvegan @myproteinuk vanilla soy isolate protein powder
  • 5g chia seeds
  • 50g pumpkin purée ( I buy mine from either Tesco’s, Sainsbury’s, waitrose, Amazon, planet organic or whole foods)
  • 1/4 tsp baking powder and the whole tub of cinnamon ?
  • 5g pumpkin seeds and some @myproteinuk peanut butter for toppings

Preparation

  1. Mix all of the ingredients together except for the toppings (add some of the pumpkin seeds, leave the remaining to top with)

  2. Mould into a cookie! Place on to a baking lined baking tray

  3. Bake in the oven for 15 mins on 180c

  4. Leave to cool and top with the peanut butter

  5. I also drizzled on some sugar free syrup
