Single Serve High Protein Pumpkin Cookie
Ingredients
- 0g plain flour
- 15g @myvegan @myproteinuk vanilla soy isolate protein powder
- 5g chia seeds
- 50g pumpkin purée ( I buy mine from either Tesco’s, Sainsbury’s, waitrose, Amazon, planet organic or whole foods)
- 1/4 tsp baking powder and the whole tub of cinnamon ?
- 5g pumpkin seeds and some @myproteinuk peanut butter for toppings
Preparation
Mix all of the ingredients together except for the toppings (add some of the pumpkin seeds, leave the remaining to top with)
Mould into a cookie! Place on to a baking lined baking tray
Bake in the oven for 15 mins on 180c
Leave to cool and top with the peanut butter
I also drizzled on some sugar free syrup
