Giant Single Serve Pumpkin Strudel Protein Skillet

Ingredients

Base

  • 50g plain flour (you can also sub for oats)
  • 30g (1 scoop) of @myproteinuk vanilla soy isolate protein powder
  • 5g chia seeds
  • 100g pumpkin purée
  • 150ml unsweetened almond milk
  • a tonne of cinnamon
  • 1/4 tsp baking powder
  • a squeeze of a lemon

Topping

  • 30g pats
  • 20g vegan butter (can sub for coconut oil)
  • 10g sweetener (can sub for granulated sugar or agave syrup)
  • some cinnamon

Preparation

  1. Mix the base and topping mixtures separately.

  2. Place the base mixture in a single serve skillet or oven proof bowl.

  3. Top with the topping mixture.

  4. Place in the oven for 20-25 minutes at 180°C.

  5. Take out of the oven and drizzle with @myproteinuk butterscotch syrup.
