Pumpkin Oat Bars with Lemon Frosting Delight
Ingredients
- 1 cup rolled oats
- 1 cup oat flour
- 1/3 cup pumpkin puree (made from bottleneck pumpkin)
- 2 chia flax eggs
- 1 mashed ripe banana
- 1 tsp speculoos spice
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 2 tsp baking powder
- a handful walnuts
- enough oat milk to combine
Frosting
- 8 tbsp greek yogurt
- 1 tbsp honey or maple syrup
- 1 tbsp lemon zest
- 1 tbsp lemon juice
Preparation
Combine all bar ingredients with enough oat milk to mix well.
Bake the mixture at 190C for 35-40 minutes.
Prepare the lemon frosting by mixing all frosting ingredients together.
Top the baked bars with the lemon frosting.
