Pumpkin Oat Bars with Lemon Frosting Delight

Ingredients

  • 1 cup rolled oats
  • 1 cup oat flour
  • 1/3 cup pumpkin puree (made from bottleneck pumpkin)
  • 2 chia flax eggs
  • 1 mashed ripe banana
  • 1 tsp speculoos spice
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 2 tsp baking powder
  • a handful walnuts
  • enough oat milk to combine

Frosting

  • 8 tbsp greek yogurt
  • 1 tbsp honey or maple syrup
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice

Preparation

  1. Combine all bar ingredients with enough oat milk to mix well.

  2. Bake the mixture at 190C for 35-40 minutes.

  3. Prepare the lemon frosting by mixing all frosting ingredients together.

  4. Top the baked bars with the lemon frosting.
