Single-Serving Vegan Cinnamon Roll

Ingredients

Dough

  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1 tsp sugar
  • dash of salt
  • 1 1/2 tbsp dairy-free milk
  • 2 tsp melted coconut oil
  • 1/4 teaspoon vanilla

Filling

  • brown or coconut sugar
  • cinnamon
  • vegan butter

Frosting

  • 2 tbsp vegan cream cheese
  • 1/2 tbsp powdered sugar
  • dash of vanilla & salt

Preparation

  1. In a bowl, combine the flour, baking powder, sugar, salt, milk, oil, and vanilla and mix them well.

  2. Place a small amount of flour on a large cutting board and spread the flour around, then using a rolling pin, roll out the dough in a long rectangular shape.

  3. Coat the rolled-out dough with a thin layer of vegan butter, then sprinkle on the sugar and cinnamon.

  4. Roll up the dough into the shape of your cinnamon roll, but don’t roll it too tightly.

  5. Place the roll in an oven-safe dish, such as a small ramekin.

  6. Bake the roll for about 15-17 minutes at 350°F/175°C, until the edges are slightly golden.

  7. While the cinnamon roll is baking, create the frosting by combining the cream cheese, sugar, vanilla, and salt in a small bowl and mixing them well.

  8. Once the roll is done baking and has cooled off, top it with the frosting and dig in.

Notes

  1. This recipe is designed for a single serving and does not require yeast, with baking time around 15 minutes.
