Valentine's Day Heart Thumbprint Cookies

Ingredients

  • 1 cup natural creamy peanut butter
  • 1/3 cup + 1 tbsp all-purpose flour (47 g)
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/4 cup dairy-free milk
  • 1/2 tsp baking powder
  • 2 tsp vanilla
  • 1/4 teaspoon salt
  • raspberry jelly

Preparation

  1. Add the peanut butter, flour, sugar, milk, baking powder, vanilla, and salt to a large bowl and combine well

  2. Scoop out the dough and roll it into balls using a cookie scoop for equal sizes to get about 12 cookies, though this may vary by size

  3. Use the back of a fork or another tool to form a heart shape on top of each cookie

  4. Fill each heart with raspberry jelly, optionally using a piping bag or a spoon for easier application

  5. Bake the cookies for 10 minutes at 350°F or 175°C

Tips

  1. Use peanut butter with oil separation for best results; if using thicker peanut butter, add more milk to adjust dough consistency
