Valentine's Day Heart Thumbprint Cookies
Ingredients
- 1 cup natural creamy peanut butter
- 1/3 cup + 1 tbsp all-purpose flour (47 g)
- 1/3 cup brown sugar
- 1/3 cup sugar
- 1/4 cup dairy-free milk
- 1/2 tsp baking powder
- 2 tsp vanilla
- 1/4 teaspoon salt
- raspberry jelly
Preparation
Add the peanut butter, flour, sugar, milk, baking powder, vanilla, and salt to a large bowl and combine well
Scoop out the dough and roll it into balls using a cookie scoop for equal sizes to get about 12 cookies, though this may vary by size
Use the back of a fork or another tool to form a heart shape on top of each cookie
Fill each heart with raspberry jelly, optionally using a piping bag or a spoon for easier application
Bake the cookies for 10 minutes at 350°F or 175°C
Tips
Use peanut butter with oil separation for best results; if using thicker peanut butter, add more milk to adjust dough consistency
