Soft Oven-Baked Meatballs
Ingredients
- 500-750 grams medium-fat ground beef
- 1 onion
- 2 cloves garlic
- 1/2 cup bread crumbs or crumbs from 3-4 slices of bread
- 1 teaspoon pepper paste
- 1/2 bunch parsley
- 1 teaspoon baking soda
- 1 tea glass water (about 1/2 cup)
- Salt, black pepper, cumin, red pepper flakes, sweet paprika, and meatball spice to taste
- Optional: oil if meat is lean
- 1 egg
Preparation
Grate the onion in a deep bowl and squeeze out the excess water.
Grate the garlic.
Add the bread crumbs, egg yolk, salt, spices, and ground meat and mix well.
Add the finely chopped parsley and knead thoroughly.
While kneading, add a little water to help with the process.
Let the mixture rest for 2-3 hours; it is even better if prepared the day before.
Shape the mixture into desired forms and place on a parchment-lined baking tray.
Brush with a little oil using a brush and bake in a preheated oven at 220°C for 25-30 minutes until golden brown.

Tips
If the ground meat is lean, add some oil or olive oil to prevent dryness during baking.
Preparing the mixture a day in advance enhances the flavor and texture.
