Spicy Barbecue Salmon with Asparagus and Sweet Potatoes

Ingredients

  • 2 salmon fillets
  • 1/4 cup barbecue sauce
  • 1/2 to 1 teaspoon sriracha
  • asparagus
  • sweet potatoes
  • olive oil

Preparation

  1. Preheat oven to 400°F.

  2. Place salmon fillets in a baking dish.

  3. In a bowl, mix 1/4 cup BBQ sauce with 1/2 to 1 teaspoon sriracha, adjusting sriracha based on desired spiciness.

  4. Pour two-thirds of the mixture over the salmon.

  5. Bake for 20 minutes.

  6. Broil for 1-2 minutes.

  7. Add the remaining mixture to the salmon.

  8. For asparagus: Brush with olive oil and bake for 15 minutes at 400°F.

  9. For sweet potatoes: Brush with olive oil and cook on a grill skillet.
