Easy One-Pan Salmon with Potatoes and Asparagus

Ingredients

  • 1 lb petite potatoes
  • 1 tbsp avocado or olive oil
  • Salt and pepper
  • Salmon
  • Asparagus
  • 1-2 tsp Cajun seasoning

Preparation

  1. Preheat oven to 425F.

  2. Cut 1 lb petite potatoes in half and coat with 1 tbsp avocado or olive oil, salt, and pepper. Put on a large baking sheet (grease beforehand).

  3. Bake for 15 minutes.

  4. While potatoes are baking, coat salmon with 1-2 tsp Cajun seasoning.

  5. Coat asparagus with 1 tbsp oil and sprinkle with Cajun seasoning.

  6. Bake for an additional 12 minutes.

  7. Broil for a few minutes at the end.
