Crispy Salmon with Spicy Potatoes and Roasted Brussels

Ingredients

  • 9-10 small gold potatoes
  • 1 tablespoon avocado oil
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon paprika
  • 1 pound Brussels sprouts
  • 1 tablespoon oil
  • Pepper
  • Pink Himalayan salt
  • Salmon filets
  • Non-stick spray

Preparation

  1. Preheat oven to 425F

  2. Cut 9-10 small gold potatoes into wedges and coat with 1 tablespoon avocado oil, 1 teaspoon Cajun seasoning, 1 teaspoon garlic, 1/4 teaspoon cayenne, and 1/2 teaspoon paprika, ensuring even coating

  3. Spray a pan with non-stick spray and add the coated potatoes

  4. Rinse out the bowl, then add 1 pound Brussels sprouts cut in halves and coat with 1 tablespoon oil, pepper, and pink Himalayan salt

  5. Add the coated Brussels sprouts to the pan

  6. Bake for 20 minutes

  7. After 20 minutes, remove from oven and add salmon filets sprinkled with salt and pepper

  8. Bake for an additional 12 minutes, then broil to get crispy
