Strawberry Chocolate Chip Bars

Ingredients

  • 1 cup gluten free all purpose flour {or regular}
  • 1/2 cup coconut sugar {or regular sugar}
  • 1/2 tsp. baking powder
  • 1/2 cup almond milk
  • 1/4 cup oil {I used olive oil}
  • 1 egg
  • 1/2 cup diced strawberries
  • 1/4 cup mini chocolate chips

Preparation

  1. Preheat oven to 350F and spray or line an 8x8 baking dish.

  2. In a large bowl, whisk together the flour, sugar, and baking powder.

  3. In a small bowl, whisk together the almond milk, oil, and egg.

  4. Pour the wet ingredients into the dry and stir until well combined.

  5. Lightly coat the strawberries and chocolate chips in a little extra flour {helps them to not sink to the bottom} then add those to the batter.

  6. Pour the batter into the 8x8 and bake for 23 minutes! {let them cool for a little bit before cutting into slices}
