Super Healthy Cookies

Ingredients

  • 1 cup oat flour⁣
  • - 1/2 cup walnut flour (or almond/peanut/coco flour) not meal ⁣
  • - 1/2 cup sugar⁣
  • - 70g Margarine (hard one not soft)⁣
  • - 1 tsp baking powder⁣
  • - 2 tbsp milk (I used Oat milk)⁣
  • - 2 pinches of salt⁣
  • - 30g cranberries⁣
  • - 30g pumpkin seeds⁣
  • - 1 1/2 tsp orange blossom water⁣
  • - a few sliced kumquats

Preparation

  1. Preheat oven to 350°F/180°C. Line a baking sheet with parchment paper. Set aside for later.⁣

  2. In a large bowl, combine the sugar and margarine + milk. Whisk until creamy. ⁣

  3. In another bowl, combine all the other dry ingredients. ⁣

  4. Sift the dry ingredients to the wet ingredients. Whisk until thoroughly combined. ⁣

  5. Add the cranberries and pumpkin seeds. ⁣

  6. Scoop cookie dough onto the prepared baking sheet. Flatten cookies into a round disc—they will not spread during baking. ⁣

  7. Bake for 12-15 minutes. Transfer to a cooling rack. Allow cooling completely. Enjoy!⁣
