Sweet Potato Pizza Crust

Ingredients

  • 1 cup fully cooked sweet potato (mashed and peeled)
  • 1 egg
  • 2/3 cup gf oat flour
  • 1 tbsp coconut flour
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp Apple cider vinegar

Preparation

  1. In a bowl, whisk the egg.

  2. For the sweet potato, bake it at 425°F for 50 minutes the night before or microwave it if short on time.

  3. Add in the sweet potato and all of the other ingredients and mix together well.

  4. Press into a dough in the bowl.

  5. Preheat the oven to 400°F.

  6. Make 2 mini pizzas or 1 regular pizza.

  7. Line a pizza pan or a regular pan with parchment paper and place the dough on it, flattening out to about 1/2 inch thick.

  8. Bake at 400°F for 30 minutes.

  9. Remove, flip, and bake for 10 more minutes.

  10. Remove and add toppings, then bake for 5-10 more minutes.
