Vegan Banana Bread

Ingredients

  • 4 small-med ripe bananas (the more spots the sweeter)
  • 1/4 cup oat unsweetened milk
  • 1 tsp apple cider vinegar
  • 1/2 cup coconut sugar
  • 1/4 cup avocado oil
  • 1tsp vanilla
  • 1 1/2 cups oat flour (i threw 2 cups of oats into food processor blended til a smooth consistency and got 1.5 cup of flour)
  • 1/2 cup of oats
  • 1tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup dark chocolate chips

Preparation

  1. Preheat oven to 350f

  2. Place apple cider vinegar into small bowl and add milk, stir in and set aside

  3. Mash up bananas till no chunks with masher or fork, add coconut sugar, oil, vanilla

  4. Mix well then add the bowl with the milk and mix again

  5. Make oat flour in food processor

  6. Add flour, oats, baking soda, into the bowl and make sure to not over mix

  7. Mix till the dry and wet are together and u see no flour clumps

  8. Then fold in chocolate chips

  9. Take your baking pan, may need to grease yours if it’s not a non stick

  10. Pour the mixture into the pan and top with walnuts and chocolate chips (optional) for a fancier top

  11. Bake for 1 hour 10 minutes

  12. Around the hour mark i took it out and slid a knife in the middle to see if it was done

  13. If it comes out clean it will be done, if it comes out gooey still it needs to bake longer

  14. Once it’s done take out and let rest for a little bit before cutting into it for the best results
