Banana Blueberry Chocolate Muffins
Ingredients
- 4 small-med ripe bananas (the more spots the sweeter)
- 1/4 cup oat unsweetened milk
- 1 tsp apple cider vinegar
- 1 cup blueberries
- 1/4 cup sunflower seed butter
- 1/2 cup coconut sugar
- 1/4 cup avocado oil
- 1tsp vanilla
- 2 cups oat flour (i threw 2.5 cups of oats into blender till a smooth consistency )
- 1tsp baking soda
- 1/2 tsp salt
- vegan chocolate chips
Preparation
Preheat oven to 350f
Place apple cider vinegar into small bowl and add milk, stir in and set aside
Mash up bananas till no chunks with masher or fork, add coconut sugar, oil, vanilla
Mix well then add the bowl with the milk and mix again
Add sunflower seed butter and mix up
Make oat flour in blender
Add flour, oats, baking soda, into the bowl and make sure to not over mix
Mix till the dry and wet are together and u see no flour clumps
Take your muffin pan, fill w liners (i use silicon muffin liners for no waste and it’s non stick and easy to clean) pour the mixture into the liners and throw in blueberries here and there and in between the batter - instead of mixing it in the batter before and top with chocolate chips
Bake for 25 minutes or till they have risen and cooked thru - test w toothpick in middle of muffins, if it comes out clean it will be done, if it comes out gooey still it needs to bake longer
Once it’s done take out and let rest for a little bit before lifting muffins out
