One Bowl Banana Almond Flour Muffins

Ingredients

  • 2 ripe bananas
  • 1/4 cup avocado oil or light tasting olive oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon coconut sugar
  • 1.5 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts
  • mini chocolate chips (optional)

Preparation

  1. Mash 2 ripe bananas.

  2. Combine with 1/4 cup avocado oil or light tasting olive oil, 2 eggs, 1 teaspoon vanilla, and 1 tablespoon coconut sugar; stir.

  3. Add 1.5 cups almond flour, 1 teaspoon baking soda, and 1 teaspoon cinnamon.

  4. Fold in 1/2 cup chopped walnuts.

  5. Optionally include mini chocolate chips.

  6. Bake for 22 minutes at 350 degrees Fahrenheit.
