One Bowl Banana Almond Flour Muffins
Ingredients
- 2 ripe bananas
- 1/4 cup avocado oil or light tasting olive oil
- 2 eggs
- 1 teaspoon vanilla
- 1 tablespoon coconut sugar
- 1.5 cups almond flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup chopped walnuts
- mini chocolate chips (optional)
Preparation
Mash 2 ripe bananas.
Combine with 1/4 cup avocado oil or light tasting olive oil, 2 eggs, 1 teaspoon vanilla, and 1 tablespoon coconut sugar; stir.
Add 1.5 cups almond flour, 1 teaspoon baking soda, and 1 teaspoon cinnamon.
Fold in 1/2 cup chopped walnuts.
Optionally include mini chocolate chips.
Bake for 22 minutes at 350 degrees Fahrenheit.
