Blueberry Banana Yogurt Muffins

Ingredients

  • 2 small ripe bananas (1/2 cup mashed)
  • 1/2 cup Nancy's Yogurt Organic Whole Milk Yogurt
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/2 cup cassava flour or all purpose flour
  • 1 cup almond flour
  • 1 tsp. baking soda
  • 1/2 cup blueberries

Preparation

  1. Preheat oven to 350°F and spray or line a muffin tin.

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients and fold in the blueberries.

  3. Pour the batter into the muffin tin to make 12 muffins and bake for 18 minutes.
