Coffee Cake Banana Bread
Ingredients
- 3/4 cup almond flour
- 3/4 cup 1-1 gluten free baking flour
- 1 tsp baking soda
- pinch of salt
- 1 tsp ground cinnamon
- 3 over-ripe bananas
- 2 eggs
- 1/3 cup butter or coconut oil
- 3 tbsp sour cream
- 1/4 cup brown sugar
- 1/3 cup sugar
- 1 tsp vanilla
Crumble
- 1/2 cup rolled oats or your favorite granola
- 3 tbsp coconut oil or butter
- 1 tsp cinnamon
- 1/4 cup brown sugar
Preparation
Preheat oven to 350 and line a loaf pan
Combine all wet ingredients for the bread including sugar and mix together
Add in dry ingredients and combine
Make the crumble by pulsing all crumble ingredients in a food processor and then sprinkle a nice layer on top of the bread
Bake for 50-60 minutes, check at 50 to see if a toothpick comes out clean
