Coffee Cake Banana Bread

Ingredients

  • 3/4 cup almond flour
  • 3/4 cup 1-1 gluten free baking flour
  • 1 tsp baking soda
  • pinch of salt
  • 1 tsp ground cinnamon
  • 3 over-ripe bananas
  • 2 eggs
  • 1/3 cup butter or coconut oil
  • 3 tbsp sour cream
  • 1/4 cup brown sugar
  • 1/3 cup sugar
  • 1 tsp vanilla

Crumble

  • 1/2 cup rolled oats or your favorite granola
  • 3 tbsp coconut oil or butter
  • 1 tsp cinnamon
  • 1/4 cup brown sugar

Preparation

  1. Preheat oven to 350 and line a loaf pan

  2. Combine all wet ingredients for the bread including sugar and mix together

  3. Add in dry ingredients and combine

  4. Make the crumble by pulsing all crumble ingredients in a food processor and then sprinkle a nice layer on top of the bread

  5. Bake for 50-60 minutes, check at 50 to see if a toothpick comes out clean
