Vegan Honey Cake for Rosh Hashanah

Ingredients

  • 2 1/4 cups Flour
  • 2 tsp of Baking Powder
  • 1 tsp of Baking Soda
  • pinch of Salt
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp ground Ginger
  • 1/2 tsp ground Nutmeg
  • 1/2 tsp ground Cloves
  • 1/2 cup Cane Sugar
  • 1/2 cup BeeFree Honee (you can use Agave or Maple Syrup)
  • 3/4 cup Warm Coffee
  • 1/2 cup Apple Sauce
  • 1/2 Tbsp Molasses
  • 2 tsp of Vanilla
  • 1 tsp of Almond Extract
  • 1/3 cup Sunflower or Organic Canola Oil
  • 1/4 cup sliced Almonds for garnish

Preparation

  1. In a large bowl mix together all of the dry ingredients.

  2. In a separate cup mix together all of the wet ingredients.

  3. Pour the wet ingredients into the dry and mix well or until fully incorporated.

  4. Pour the batter into a round cake or loaf pan and sprinkle the top with Almonds. Bake at 350 for 24 - 30 minutes or until a tooth pick comes out clean.

  5. The flavors are subtle and it pairs perfectly with a cup of Coffee or Tea. Go all out and top it with a scoop of Vanilla Ice Cream for dessert.
