Vegan Honey Cake for Rosh Hashanah
Ingredients
- 2 1/4 cups Flour
- 2 tsp of Baking Powder
- 1 tsp of Baking Soda
- pinch of Salt
- 1 1/2 tsp Cinnamon
- 1/2 tsp ground Ginger
- 1/2 tsp ground Nutmeg
- 1/2 tsp ground Cloves
- 1/2 cup Cane Sugar
- 1/2 cup BeeFree Honee (you can use Agave or Maple Syrup)
- 3/4 cup Warm Coffee
- 1/2 cup Apple Sauce
- 1/2 Tbsp Molasses
- 2 tsp of Vanilla
- 1 tsp of Almond Extract
- 1/3 cup Sunflower or Organic Canola Oil
- 1/4 cup sliced Almonds for garnish
Preparation
In a large bowl mix together all of the dry ingredients.
In a separate cup mix together all of the wet ingredients.
Pour the wet ingredients into the dry and mix well or until fully incorporated.
Pour the batter into a round cake or loaf pan and sprinkle the top with Almonds. Bake at 350 for 24 - 30 minutes or until a tooth pick comes out clean.
The flavors are subtle and it pairs perfectly with a cup of Coffee or Tea. Go all out and top it with a scoop of Vanilla Ice Cream for dessert.
