Vegan Single Serve Peanut Butter Chocolate Cinnamon Roll

Ingredients

Dough

  • 1/4 cup flour
  • 1/4 tsp baking powder
  • 1 tsp sugar
  • dash of salt
  • 2 tbsp dairy free milk
  • 1 1/2 tsp melted coconut oil
  • 1/4 tsp vanilla

Filling

  • melted coconut oil
  • peanut butter
  • 1 tbsp coconut sugar
  • cinnamon
  • mini chocolate chips

Frosting

  • 1 1/2 tbsp melted chocolate
  • 1 1/2 tbsp creamy peanut butter

Preparation

  1. Combine the flour, baking powder, sugar, salt, milk, oil, and vanilla in a bowl and mix well.

  2. Place a small amount of flour on a large cutting board and spread it around. Roll out the dough into a long rectangular shape using a rolling pin.

  3. Coat the rolled out dough with coconut oil and spread peanut butter evenly over it. Then sprinkle on the sugar, cinnamon, and chocolate chips.

  4. Roll up the dough into a cinnamon roll shape, not too tightly.

  5. Place the roll in an oven-safe dish, such as a small ramekin.

  6. Bake for about 15 minutes at 350°F or 175°C.

  7. While baking, melt the chocolate in the microwave and combine it with peanut butter to make the frosting.

  8. Once baked and cooled, top with the frosting and serve.
