Vegan Strawberry Cheesecake Bars
Ingredients
- 90g + 10g oats
- 5 digestive biscuits
- 1/2 tsp baking powder
- 125g apple purée
- 3 tbsp aquafaba
- 60ml + 1/2 tbsp maple syrup
- 60g vegan cream cheese
- 1/2 tbsp coconut oil
- 225g strawberries
Preparation
Slice the strawberries and bake them at 180°C for 20 minutes.
Blend 90 grams of oats and 4 digestive biscuits.
Mix the blended mixture with baking powder.
Add apple purée, aquafaba, and 2 tablespoons of maple syrup.
Pour the mixture into a baking pan and bake at 180°C for 15 minutes.
For the cheesecake layer, blend the strawberries, then stir in the vegan cream cheese and 2 tablespoons of maple syrup.
Pour this over the baked cake base once it is done.
Blend 1/2 tablespoon of maple syrup, 10 grams of oats, coconut oil, and 1 digestive biscuit.
Sprinkle this mixture over the cheesecake layer.
Bake in the oven for around 15 minutes.
