Vegan Strawberry Cheesecake Bars

Ingredients

  • 90g + 10g oats
  • 5 digestive biscuits
  • 1/2 tsp baking powder
  • 125g apple purée
  • 3 tbsp aquafaba
  • 60ml + 1/2 tbsp maple syrup
  • 60g vegan cream cheese
  • 1/2 tbsp coconut oil
  • 225g strawberries

Preparation

  1. Slice the strawberries and bake them at 180°C for 20 minutes.

  2. Blend 90 grams of oats and 4 digestive biscuits.

  3. Mix the blended mixture with baking powder.

  4. Add apple purée, aquafaba, and 2 tablespoons of maple syrup.

  5. Pour the mixture into a baking pan and bake at 180°C for 15 minutes.

  6. For the cheesecake layer, blend the strawberries, then stir in the vegan cream cheese and 2 tablespoons of maple syrup.

  7. Pour this over the baked cake base once it is done.

  8. Blend 1/2 tablespoon of maple syrup, 10 grams of oats, coconut oil, and 1 digestive biscuit.

  9. Sprinkle this mixture over the cheesecake layer.

  10. Bake in the oven for around 15 minutes.
