Butternut Squash Smoothie Parfait

Ingredients

  • 3/4 cup steamed then frozen cauliflower
  • Approximately 1 cup papaya (substitute banana if unavailable)
  • 1/2 frozen banana
  • 1/4 cup homemade nut milk
  • 1/4 cup cooked then frozen butternut squash (or sweet potato)
  • 1/2 tsp cinnamon
  • Optional: 1 scoop protein powder of choice

Toppings

  • Roasted Pumpkin Spice delicata squash
  • Purely Elizabeth granola
  • Almond butter
  • Hu Kitchen chocolate gems

Preparation

  1. Blend all the ingredients under Ingredients in a blender until smooth and creamy.

  2. Roast the delicata squash with pumpkin spice in an oven preheated to 200°C for 20-30 minutes or until tender.

  3. Assemble the parfait by layering the smoothie mixture with the toppings in a glass or bowl.
