Butternut Squash Smoothie Parfait
Ingredients
- 3/4 cup steamed then frozen cauliflower
- Approximately 1 cup papaya (substitute banana if unavailable)
- 1/2 frozen banana
- 1/4 cup homemade nut milk
- 1/4 cup cooked then frozen butternut squash (or sweet potato)
- 1/2 tsp cinnamon
- Optional: 1 scoop protein powder of choice
Toppings
- Roasted Pumpkin Spice delicata squash
- Purely Elizabeth granola
- Almond butter
- Hu Kitchen chocolate gems
Preparation
Blend all the ingredients under Ingredients in a blender until smooth and creamy.
Roast the delicata squash with pumpkin spice in an oven preheated to 200°C for 20-30 minutes or until tender.
Assemble the parfait by layering the smoothie mixture with the toppings in a glass or bowl.
