Chocolate Cherry Coconut Bars

Ingredients

  • 200g vegan dark chocolate (70% cocoa)
  • 1 cup dried cherries
  • 3 cups desiccated coconut
  • 1/2 cup rice malt syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut oil

Preparation

  1. Line base and sides of an 18cm x 28cm slice pan with baking paper.

  2. Place half the chocolate in a small heatproof bowl over a saucepan of gently simmering water (don’t allow bowl to touch water) stir until just melted.

  3. Pour chocolate into pan and spread to cover base.

  4. Refrigerate for 15 minutes or until set.

  5. Keep water at a gentle simmer and reserve bowl off the heat.

  6. Combine cherries and coconut in a large bowl and stir in syrup, vanilla and oil until combined.

  7. Press mixture very firmly in an even layer over chocolate.

  8. Return pan of water to gentle simmer over medium heat.

  9. Place remaining chocolate in reserved bowl over water and stir until melted.

  10. Pour chocolate over cherry-coconut layer and spread evenly with spatula.

  11. Freeze for 1 hour or until set (alternatively, refrigerate for 3 hours or until set).

  12. Cut into squares before serving.
