Matcha Coconut Fruit Popsicles

Ingredients

  • 1 can 100% coconut milk
  • 2 tsp matcha powder
  • 1 TBSP maple syrup
  • 1/2 cup fresh raspberries
  • 12 cherries (I used frozen)

Preparation

  1. Blend the coconut milk, matcha powder and maple syrup together with a whisk

  2. Pour the liquid into the moulds until they are 1/4 full

  3. Add in a layer of raspberries and use them all

  4. Pour in a bit more liquid and then add 2 cherries per mould

  5. Top with the remaining liquid then put on the lid and insert the sticks, ensuring they are straight for easier removal

  6. Freeze for at least 5 hours

Tips

  1. To get them out of the mould, run the outside under warm water for about 20 seconds
