Perfect Summer Gazpacho
Ingredients
- 1 tsp each
- italian seasoning
- dried rosemary
- dried dill
- fennel seeds
- 1 tbsp olive oil
- Salt to taste
Preparation
Mix all ingredients in a large bowl except garlic and fennel seeds
Marinate overnight for best results. An hour at minimum.
Blend the marinated veggies in a high speed blender to a smooth creamy texture
Heat oil in a small pan. Once hot, add finely chopped garlic and fennel seeds.
After the garlic and fennel seeds are roasted and cooked, season the gazpacho with it when you serve.
